1/2 cup white sugar
1/2 cup brown sugar – firmly packed
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon optional
1/2 tsp ground nutmeg optional
1/4 tsp ground cloves optional
1/2 cup crushed walnuts optional


1/2 cup butter – softened
2 large eggs
2 tsps pure vanilla extract
4 large bananas – overripe
1 cup applesauce optional

  • preheat your oven to 325°F / 160°C
  • grease and flour a 9×5 inch baking pan
  • to make muffins instead, line cupcake sheets with wrappers


  • mix butter and sugars until creamy
  • beat in eggs and vanilla
  • mix in mashed bananas and applesauce
  • mix in combined flour, baking soda, baking powder, salt, and spices – do not overmix
  • stir in walnuts


  • pour mixture evenly into prepared pan until ¾ full
  • decorate top with banana slices, walnuts, or oats
  • bake for 1 hour or until a fork inserted into the center comes out clean
  • for muffins, bake for 15-20 minutes or until a fork inserted into the center comes out clean
